When dolphins jump out of the water, it's called breaching if they leap out of the water and re-enter on their front or back side, or porpoising if they repeatedly jump in an alternating motion while swimming at high speeds. Other behaviors include bow riding, where they follow a boat, and spyhopping, where they lift their head vertically out of the water.  The fastest dolphins was clocked at approximately 37-40 mph, which is the top end speed of the common dolphin.
